RECIPE: Delicious Garlic scape Pesto
Garlic scapes are the stalks and flower buds of the garlic plant. Many farmers remove these "flower stalks" in the spring time to send more of the plants energy to the garlic bulb.
Often times the scapes are simply discarded, although they ARE edible and can make an absolutely fantastic pesto!
So here is a simple and heavenly recipe to get the most out of those garlic scapes:
- 1 lb fresh garlic scapes
- 1 1/2 cups of grated Parmesan cheese
- 1 cup of walnuts
- 1 cup extra virgin olive oil
- juice of 1 or 2 lemons
- 1 tsp ground black pepper
- fine Himalayan salt to taste
Cut up scapes into 1 inch pieces and place them in food processor.
Add oil, Parmesan, walnuts, lemon juice and black pepper - start with one teaspoon and add more if required.
Add salt if needed.
Blend in a food processor until smooth.
Serve with pasta, fish and other meat, use as a dip (since it's really strong you might want to add sour cream or Greek yogurt). We love to add it to our home made veggie burgers; pesto ads moisture and amazing flavor to veggie burgers.
